Begin by preheating your oven to 350 degrees. In a skillet brown the sausage over medium heat and drain. Now in a baking dish, layer the sausage, onions, mushrooms, chopped tomatoes, and cheese then set aside for later.

Combine pancake mix, eggs, milk oregano, salt, and pepper together in a large mixing bowl. Whisk these ingredients together and pour over cheese in your baking dish. Bake your casserole uncovered for 45-50 mins or until the top is lightly browned. Now you are ready to eat.

  • 1 lb Pork Sausage
  • ½ cup of Chopped Green Onions
  • 1 can of mushrooms (4oz drained)
  • 2 medium tomatoes (chopped)
  • 2 cups of shredded part-skim mozzarella cheese (8oz)
  • 1 cup of pancake mix
  • 12 eggs-
  • 1 cup of milk
  • ½ teaspoon of dried oregano
  • ½ teaspoon of salt
  • ¼ teaspoon of pepper
  1. Preheat oven to 350 degrees
  2. In a skillet brown sausage over medium heat and drain.
  3. In a baking dish layer the sausage, chopped green onions, mushrooms, chopped tomatoes, and cheese.
  4. Set the baking dish to the side.
  5. In a large bowl combine pancake mix, eggs, milk oregano, salt, and pepper together.

  6. Whisk these ingredients together and pour over cheese in your baking dish.

  7. Bake your casserole uncovered for 45-50 mins or until the top is lightly browned.

  8. Let stand for about 10 minutes before serving.
